A Slow & Peaceful Fourth of July
A holiday calls for a slow morning. Breakfast at 11.

Oatmeal & Avocado Bagle
My oatmeal recipe is a little unique.
How to cook:
- Boil water: Put equal amounts of oats and water in a pot. Cover with a lid and bring to a boil.
- Add salt and milk: Once it boils, add a pinch of salt. The water should be mostly gone by now. Next, add the same amount of milk as the oats (I love soy milk, but oat or cashew milk works great too) to double the liquid, and cover it again.
- Do NOT stir: Shake the pot gently instead of stirring vigorously, as over-stirring makes it gummy. If the oats stick to the bottom, just gently lift them with a spoon and shake the pot to adjust.
- Simmer and steam: Cover again and cook on low heat until fully cooked. Turn off the heat and let it steam for 2 to 3 minutes.
To serve: Pour a splash of cold soy milk over it—this is perfect for summer!
